Food & Beverage Cost Control Supervisor

Marco Polo Hongkong Hotel

Responsibility

  • Daily reconciliation on receiving reports & F&B purchase invoice.
  • Prepare regular reports, e.g. weekly flash report, daily F&B sales breakdown & monthly canteen meal costing).
  • Calculate daily F&B transfer for inter-kitchen, in-house senior staff.
  • Prepare for recipe costing of menu items.
  • Assist on the costing audits, e.g. menu price checking, buffet yield test, blind tasting and butcher testing.
  • Being the witness of the open tendering processAttend month-end food and beverage stock-take.
  • Assist in monitoring and helping the operation of Food & Beverage receiving area.
  • Complete other duties as assigned.

Qualifications

  • Diploma / Certificate in  Hotel Management and Catering or Accounting is preferred
  • Minimum 3 years work experience in Food & Beverage Cost Control
  • Have a gentle character and willing to listen and communicate with others
  • Good command in both English and Cantonese
  • Proficient in Microsoft Office, Flex System and SCM System
  • Candidate with less experience will be considered as Assistant Food & Beverage Cost Controller
