Chief Steward

Marco Polo Hongkong Hotel

Responsibility

  • Oversee daily sanitation operations, including dish room operations, night cleaning, and maintenance of all kitchen and storage areas.
  • Manage a team of stewards and kitchen attendants.
  • Monitor stock levels of cleaning supplies, chemicals, and operating equipment.
  • Ensure compliance with all applicable laws, local health regulations, food handling, and sanitation standards.
  • Work closely and strategically with the Executive Chef, culinary team, and Restaurants, Bars & Events teams to support smooth operations.

Qualifications

  • Minimum of 4 years experience as Chief Steward or in a similar role within a high-volume hospitality environment.
  • Excellent leadership, communication, and organizational skills.
  • Knowledge of sanitation, hygiene, and health regulations in food service.
