Chinese Chef

Marco Polo Hongkong Hotel

Responsibility

  • Organization and control of the Chinese kitchen, all Chinese food in the Hotel. The production of menus to the agreed standards, and the maintenance of profit margins.
  • Responsible for the effective and efficient ordering and storing of food products from nominated suppliers to agreed stock levels.
  • Responsible for the organisation of work shifts to ensure adequate colleagues’ coverage, to meet business demand.
  • Responsible for maintaining the standard of cooking and food presentation set in conjunction with the Area Executive Chef and Executive Sous Chef.
  • Responsible for the Chinese kitchen (including Banquets, Coffee Shop and In-Room Dining) in all aspects of food preparation, colleagues, hygiene and cleanliness.
  • Responsible for menu planning, food tasting and recipes with pictures for all Chinese sections.
  • Provide training to colleagues for food preparation and service procedures for all outlets to maximize colleagues’ versatility.

Qualifications

  • Minimum 10 years of relevant experiences in catering establishment with similar capacity, preferably in hotel industry
  • Good command of Chinese and preferably with English
  • Holder of Certificate related to Food Hygiene will be an advantage
