Director of Food and Beverage

Responsibility

Operational

  • Delegate responsibilities to subordinates using a multi-tasking approach and regularly evaluate their performance.
  • Act as a hands-on manager, ensuring consistent presence in the restaurant, particularly during peak hours.
  • Build rapport with guests and maintain strong customer relationships.
  • Supervise RB&E team performance, facilities, sales, and costs to optimize departmental profitability.
  • Ensure high standards of quality in both service and production to maximize guest satisfaction.
  • Maintain strict sanitation standards by enforcing Marco Polo Ortigas Manila’s Sanitation Checklist.
  • Oversee pricing, menu development, and coordination with local suppliers for food, beverages, and wine lists.

Administration

  • Contribute to the hotel’s strategic and marketing plans. Prepare and manage the RB&E department budget and forecasts.

  • Stay updated on trends, practices, and innovations in food and beverage service within the hospitality industry.

  • Foster effective employee relations within the department.

  • Act as a sales ambassador for the hotel by generating and following up on business leads to maximize revenue opportunities.

Qualifications

  • A university degree in hospitality or related discipline with a minimum of 6 – 10 years of experience in the hospitality industry, at least 5 of which must be at leadership role.
  • With excellent communication skills in Chinese (Mandarin or Cantonese) and English language.
  • Strong and proven leadership capabilities, sound judgement and decision-making skills with excellent communication abilities.
  • Proven ability to develop creative approach and strategies in driving business and revenue for food & beverage outlets.
  • With excellent knowledge of market trends.
  • Excellent interpersonal, organizational and administrative skills.
  • With strong understanding of P&L statements, and the ability to develop and implement business plans.
  • Candidates with existing or recent experience in the Philippines and Manila market are preferred though not essential.
