Director of Food and Beverage

Responsibility

Operational
  • Assign responsibilities to subordinates, implement the multi-tasking principle, and periodically check their performance.
  • Be a hands-on manager and be present at all times in the restaurant, especially during busy periods.
  • Establish rapport with guests and maintain good customer relationships.
  • Supervise the functioning of all RB&E employees, facilities, sales, and costs to ensure maximum departmental profit is achieved.
  • Take personal responsibility for maximizing quality levels in both production and service, as well as ensuring guest satisfaction.
  • Maintain high sanitation standards throughout the RB&E operation by enforcing Marco Polo Ortigas Manila’s Sanitation Checklist.
  • Supervise and coordinate the pricing and preparation of menus, beverages, and wine lists, and liaise with local suppliers.
Administration
  • Participate in the preparation of the hotel’s strategic and marketing plans. Prepare and monitor the RB&E Department budget and forecast.
  • Stay informed about trends, systems, practices, and equipment in food and beverage preparation and service within the hospitality industry.
  • Establish and maintain effective employee relations.
  • Act as a sales champion for the hotel by generating and following up on business referrals and potential sales leads to maximize hotel business.

Qualifications

  • A university degree in hospitality or a related discipline with a minimum of 6–10 years of experience in the hospitality industry, at least 5 of which must be in a leadership role.
  • Excellent communication skills in Chinese (Mandarin or Cantonese) and English.
  • Strong and proven leadership capabilities, sound judgment, and decision-making skills, with excellent communication abilities.
  • Proven ability to develop creative approaches and strategies for driving business and revenue for food and beverage outlets.
  • Excellent knowledge of market trends.
  • Outstanding interpersonal, organizational, and administrative skills.
  • Strong understanding of P&L statements, with the ability to develop and implement business plans.
  • Candidates with existing or recent experience in the Philippines and Manila market are preferred but not essential.
