Hygiene Manager
Marco Polo Hongkong Hotel
Responsibility
- Establish and maintain the Food Safety Management System (FSMS) for the assigned hotels, conduct hygiene and food safety training, carry out regular environmental hygiene audit and ensure operation complies with the standards.
- Maintain the compliance of all the documentation system throughout the operations.
- Provide advise and supervise food handlers on the proper food handling practices and ensures their observance.
- Identify key areas of risk in various food operations for early remedial actions
- Ensure compliance with the Hong Kong food and hygiene regulations and codes of practice relating to food business.
- Monitor and update all the statutory hygiene regulations and compliances.
- Act as a focal point of contact with the Food & Environmental Hygiene Department (FEHD).
- Provide technical advises on the product labeling issues for fulfilling the government requirements.
- Provide in-house food hygiene training for all the food handlers, e.g. new hires and trainees.
- Handle and investigate complaints or enquiries from customers on food hygiene and safety matters.
- Conduct regular kitchen inspections on the personal, environmental and food hygiene conditions, provide a corrective action plan and keep records on the findings.
- Check daily cleaning status in kitchens with respective kitchen managers and stewarding.
- Ensure the temperature of refrigerators and freezers are up to the standard.
- Schedule and arrange regular microbial food tests for the operations.
- Conduct regular vendor inspection with the Purchasing and stakeholders.
- Lead regular FSR meeting with the stakeholders and prepare the minutes.
- Conduct regular unannounced internal food safety and hygiene inspection with appropriate corrective action plan.
- Conduct regular announced internal food safety and hygiene walk-through with stakeholders to identify any non-conformities or defects.
- Liaise with the contracted Pest Control Company for any ad hoc pest issues in the operations, and review the pest control performance.
Qualifications
- Degree holder in Food Science, Food Technology or related disciplines
- ISO22000, HACCP, ServSafe and FEHD food hygiene manager certified
- 5 years or above experience in 5 stars hotel food hygiene or related jobs
