Pastry Chef Una has crafted six imaginative confections, each with a striking form inspired by the fashion house’s codes. The set includes a Lemon Mousse Almond Biscotti with Raspberry Coulis, shaped after the house’s classic three-dimensional crown and orb, its pillowy texture lifted by lemon and raspberry; Walnut Praliné with Cinnamon Cheese Mousse accented with pearlescent details, where crunchy nuts meet velvety mousse in a dialogue that echoes the house’s embrace and reconfiguration of diverse cultures; Bergamot Custard with Brownie in a heart motif for a sweet flutter; a classic Red Velvet Cake paired with Passion Fruit Jelly and Mango Mousse, offering an interplay of tang and creaminess; an Almond–chocolate Cookies paying homage to the CHAOS collection’s elements—sweet, cool and playfully audacious; and a Vanilla Macaron, crisp-shelled and tender within, with restrained sweetness that pairs beautifully with freshly baked plain scone and black tea rose scorne and a cappuccino.

In keeping with Niccolo’s commitment to sustainability, the savouries take inspiration from Vivienne Westwood’s healthy eating ethos, presenting three refreshing yet sumptuous bites: Sous-vide scallops with Bergamot dressing; lobster with avocado, finished with a touch of caviar; and Beetroot-cured Salmon with caviar—light, low-fat and enlivening.
