Cucina Launches Sustainable And Organic Menu

Hong Kong SAR, China, 27 December 2024 – Cucina is excited to announce the launch of its Sustainable and Organic Menu from 5 January to 31 March 2025. This new menu features six Italian delicacies that highlight sustainable and organic ingredients, reflecting the restaurant’s commitment to environmental responsibility.

In crafting these dishes, Cucina’s Chef de Cusine Andrea Delzanno is proud to use Terre Bormane Bios olive oil, which is sourced from Liguria, a seaside Italian city known for its exceptional olives. The mild and fruity flavour of this olive oil perfectly complements Chef Andrea’s fish and pasta dishes.

Among the highlighted offerings is the sustainable Kaluga caviar (HK$328) served with homemade condiments and blinis. Handpicked by Chef Andrea, this premium caviar boasts a striking grey-gold colour and a creamy texture, making it an ideal appetiser to kick off any meal.

Another standout is the sustainable Italian scampi carpaccio (HK$328). Featuring fresh scampi from southern Italy, this dish presents a light and sweet flavour profile that is enhanced by avocado, lemon oil, salmon roe, and a hint of horseradish for a subtle spiciness. It’s a dish that pairs beautifully with prosecco or champagne.

For the main course, guests can savour the salt-crusted sustainable seabass (HK$528) stuffed with garlic, herbs, lemon oil, and chives. Sourced from Italy, the aromatic fish represents Mediterranean cuisine at its finest.

Additionally, the grilled sustainable Italian Marango dry-aged porterhouse (HK$1,288) is perfect for sharing with family and friends. This unique and exceptional beef, sourced from Italy and dry-aged for 30 days, is known for its tenderness and rich flavour. It’s finished with smoked sea salt, which offers a unique aroma that enhances the flavours of the beef.

Other delectable options include the spaghetti Bio with sautéed organic clams and baby cuttlefish (HK$348) as well as the risotto with wild mushrooms and slow-cooked sustainable beef short ribs in barolo sauce topped with black truffles (HK$388).
