January 14, 2026 (Wuhan, China) – Creative Integration, Culinary Elegance. Marco Polo Wuhan’s SAVVY Restaurant proudly introduces a new menu, masterfully crafted by Chef Jacky. Blending “Western cooking techniques” with “local flavour inspirations,” the menu features a series of creative, exquisite dishes that offer local diners a refreshing gastronomic experience. The new menu officially launched on January 1, 2026.

The core of this menu renewal lies in breaking culinary boundaries. The chef delved into the dietary culture of Hubei, particularly Wuhan, and skillfully integrated local elements into Western and Asian cuisine frameworks, resulting in unique taste combinations. Whether it is the “Three Delicacies Bean Skin” beloved by Wuhan locals for breakfast or the homely “preserved egg,” these ingredients are reinvented with an international flair in this culinary experiment.

Crispy “Doupi”

This dish is a creative take on Wuhan’s local breakfast. The chef ingeniously replaces the traditional English muffin with Wuhan’s speciality snack—crispy three delicacies bean skin. The bean skin wraps fresh shiitake mushroom dices and tender meat dices, topped with a soft poached egg and drizzled with smooth hollandaise sauce. The savoury Chinese notes intertwine with the creamy Western aroma, creating rich layers of flavour.


Hongshan Caitai Greens

This refined salad highlights Wuhan’s local Hongshan caitai as its star ingredient. Served on a crisp base of lettuce and cucumber, it is delicately adorned with lace-thin lotus root slices for texture. Fresh cherry tomatoes and purple-leaf greens add colour and subtle zest. Accompanied by a separate house-made vinaigrette, the dish emphasises purity, freshness, and visual elegance—showcasing local produce through a lens of culinary sophistication.

Grilled Preserved Egg

 A homely preserved egg is revitalised through charcoal grilling. The egg is brushed with a special Chu-style sauce, combining the fresh spiciness of local pickled peppers and the pungent aroma of black pepper. After grilling, the exterior becomes charred and chewy, while the inside remains soft and springy. Served with a refreshing dipping sauce, it offers a unique, spicy, and addictive taste.

Crispy Soft-Shell Crab with Green Papaya Salad

This dish showcases borderless flavour fusion. The whole soft-shell crab is fried until golden and crispy, edible with the shell. It is paired with a refreshing green papaya salad and drizzled with a sweet-and-sour sauce made from fish sauce, lemon juice, and other ingredients, delivering a rich texture without greasiness.

Salumi Misti

Prepared for guests who appreciate classic flavours. The platter features high-quality meats, cured and air-dried following traditional methods, offering an authentic taste. It can be enjoyed with arugula, fruit jam, or bread.

Additionally, the new menu includes creative interpretations of local seasonal dishes, including Hubei-Style Crayfish and Italian-style Fermented Rice Osmanthus Panna Cotta, awaiting tasting by domestic and international visitors. The new menu is available daily from 11 am to 10.30 pm at SAVVY Restaurant starting January 1, 2026.
