NICCOLO CHENGDU LAUNCHES SEASONAL MUSHROOM DELICACIES AT YUE HIN

Chengdu, China – 17 July 2025 – Yue Hin at Niccolo Chengdu is proud to unveil “The Mushroom Feast” seasonal menu, available until 15 September 2025. Featuring a curated selection of mushrooms sourced from the mountainous regions of southwest Sichuan and southern Yunnan, the menu blends the rich flavours of Sichuan cuisine with the finesse of Cantonese classics. Each dish is crafted with care to highlight the original taste of its ingredients, offering guests a refined culinary journey that delights both the palate and the eye.

July and August mark the rainy season in Sichuan and Yunnan when mountain rains nourish the earth and awaken a rich variety of wild mushrooms — the hidden gastronomic gems of the highlands — flourishing on mossy slopes in misty forests.

Guided by Chinese Executive Chef Lucas Li’s philosophy of honouring original flavours of premium ingredients, “The Mushroom Feast” menu begins with refreshing cold dishes. Razor Clams with House-made Mushroom Sauce are bright and appetising, with a pleasantly chewy texture. Mock Duck with Wild Mushrooms is savoury and aromatic, its crunch revealing layers of rich umaminess. A highlight is the Matsutake Chicken Tofu Soup – a delicate broth combining alpine matsutake mushrooms and the signature Sichuan cuisine.



The Matsutake Peking-Style Chicken with Caviar is indulgent perfection: crispy chicken skin paired with tender matsutake slices atop flaky pastry, finished with a touch of caviar for depth and complexity. Another standout is the Pan-Seared Wagyu Beef with Matsutake – using premium M5 Wagyu and high-altitude mushrooms, simply seared to preserve their purest flavours. Rounding out the menu is the Braised Deep-Sea Yellow Croaker in Mushroom broth. The broth is crafted by simmering chicken and pork bones for four hours before adding fresh wild mushrooms. Paired with golden-fried yellow croaker, the dish delivers an unforgettable richness steeped in savoury umami. 



“The Mushroom Feast” is available at Yue Hin on Level 2 of Niccolo Chengdu. Bespoke mushroom-themed banquets are also offered upon request, starting at RMB5,999 per table for ten guests.
