Cucina celebrates game season with limited-time menu

Hong Kong SAR, China, 2 September 2025 – From 11 September to 5 November, Cucina’s Chef de Cuisine, Andrea Delzanno, invites guests on a culinary adventure with an exquisite wild game menu. This seasonal offering features six unique dishes that celebrate the rustic and earthy flavours of the Italian countryside by showcasing the bounties of wild game season. 

Guests can kick off the feast with the game cold cuts platter (HK$328), which features three distinct cold cuts: a robust wild boar mortadella, a milder smoky variant, and a flavourful venison salami. Accompanied by parmesan cheese, dried apricots, and pickles, this dish beautifully balances rich and bold flavours, making it perfect for sharing as an appetiser. 

Another standout dish is the braised venison with Barolo wine (HK$438) paired with soft polenta, smoked forest ham, and pickled vegetables. Inspired by a traditional Sunday recipe from Chef Andrea’s hometown in Piedmont, this culinary creation showcases speciality ingredients from the northwestern Italian region. The venison is marinated in a blend of wine, herbs, and juniper berries before being slow-cooked for three hours, resulting in tender and flavourful meat. The classic pairing of polenta and smoked ham elevates this dish to new heights. 

Guests can also savour the classic Piedmontese risotto with wild mushrooms and roasted quail breast (HK$368). The rich and robust flavours of the quail are complemented by the earthy notes of wild mushrooms and are further enhanced with truffles, creating a delicately balanced dish that is sure to please any palate. 

Another highlight of the menu is the roasted pigeon served with pumpkin and ginger purée, seared duck liver, and cherry sauce (HK$428). With the wild poultry accompanied by creamy celeriac root purée and tangy sauce, this dish boasts a harmonious blend of sweet and sour notes and a delectable richness. 

Meanwhile, pasta lovers can enjoy two enticing options: fettuccine with “hunter-style” stewed wild boar, juniper berry oil, and pecorino (HK$358) and bigoli with duck ragout, chanterelles, and Chianti reduction (HK$348). Both dishes boast delicious flavours and delightful textures.
