Cucina Celebrates White Asparagus Season with Six Limited-Edition Creations

Hong Kong SAR, China, 10 April 2026 — Cucina welcomes spring with a culinary tribute to white asparagus. From now to 14 June, Chef de Cuisine Andrea Delzanno presents six seasonal Italian dishes that showcase the delicate sweetness and unique texture of this prized vegetable.

For this limited-edition menu, Chef Andrea handpicks AAA-sized white asparagus from Germany’s Black Forest. “The quality and aroma of white asparagus vary by region because of different soils and climates. I favour German white asparagus for its sweetness and generous size,” he says. 

The seasonal menu starts with a poached white asparagus served with classic hollandaise and 24-month San Daniele prosciutto (HK$328). The prosciutto enhances the asparagus’ natural sweetness with its rich, melt-in-the-mouth character. Equally delicious is the white asparagus salad with Norwegian smoked salmon, Parmesan cheese, trout roe, and horseradish (HK$288) – a bright and refreshing starter that balances crunchy white asparagus with silky smoked salmon.

For meat lovers, the pan fried Italian veal chop with sautéed white asparagus, thyme, béarnaise, and black truffles (HK$488) pairs succulent veal with aromatic herbs and decadent truffle richness. Meanwhile, seafood enthusiasts are sure to enjoy the white asparagus risotto with mixed seafood, mascarpone, and seared Hokkaido scallops (HK$388) – a creamy, umami dish with a buttery and luxurious flavour profile.

Other highlights include the velvety white asparagus cream soup topped with soft-boiled cage-free egg, smoked pancetta, and black truffles (HK$238), and the vibrant spaghetti tossed with garlic, olive oil, chillies, white asparagus, razor clams, and crispy sakura shrimp (HK$368).
