White truffles are renowned for their rarity and distinctive aromas. These culinary gems take centre stage in six masterfully crafted dishes at Cucina. A standout offering is the potato & leek cream soup, mixed seafood, shaved white truffle. This delightful creation combines the earthy notes of truffles with the subtle sweetness of leeks. The dish also includes tender octopus and shrimp, which ensure that the truffles shine without being overshadowed.
Another highlight is the handmade tagliolini with butter and Parmigiano cheese, shaved white truffle. A personal favourite of Chef Andrea, this dish features Cucina’s al dente pasta made with premium Taiyouran eggs. The addition of parmesan cheese brings a savoury depth while the shaved white truffles enhance the dish’s aromatic profile to create a sublime experience.
For seafood enthusiasts, the baked Chilean seabass, sautéed clams, potato mousseline, white truffle caviar sauce is a must-try. This dish showcases tender seabass paired with earthy white truffles. The potato mousseline perfectly complements the fish while the white truffle caviar sauce elevates the overall dish.
Other culinary masterpieces include the vol-au-vent, soft-boiled Taiyouran egg, porcini, fontina, gold, white truffle and two Northern Italian dishes: risotto with champagne, Fassona beef tartare, marinated egg yolk, parmesan, white truffle and pan-fried veal scallopini with arneis sauce, Brussels sprouts, mashed potato, porcini, white truffle.
