Cucina Unveils Australian Black Truffle Menu

Hong Kong SAR, China, 9 June 2025 – Forbes Travel Guide Four-Star Restaurant Cucina is thrilled to announce its highly anticipated black truffle menu, which will be available from 15 June to 16 August 2025. Chef de Cuisine Andrea Delzanno has crafted six Italian dishes that perfectly showcase exquisite black truffles sourced from Western Australia.

With its perfect climate, air, and soil, Western Australia produces some of the finest truffles in the world. Their intense aroma and earthy flavour profile make them a sought-after ingredient in many fine-dining establishments during the summer season.

A must-try appetiser from Cucina’s black truffle menu is the beef tenderloin carpaccio, truffle cheese, button mushrooms, rocket, black truffles (HK$298). This delicate dish features paper-thin slices of beef paired with ingredients that create a delightful contrast of textures that is further enhanced by freshly shaved black truffles. Another unmissable delight is the baked crab meat in shell, creamy leeks, black truffle caviar, black truffles (HK$288). Exquisitely presented in the crab’s carapace, this dish combines the rich textures and flavours of sweet crab and creamy leeks. Freshly shaved Australian black truffles add an indulgent finishing touch that ensures pure bliss in every bite. 

Another chef-recommended highlight is the grilled wagyu beef tenderloin, seared duck liver, cherry purée, spinach, black truffles (HK$588). The wagyu is grilled to succulent perfection and pairs beautifully with the rich duck liver, while the cherry purée adds a sweet and fresh balance.

For those seeking classic and hearty Italian flavours, the homemade ravioli “del plin” stuffed with beef and spinach, red prawn tartare, black truffles (HK$348) is sure to impress. Also not to be missed is the fettuccine with butter and parmesan cheese sauce, fresh Tuscan sausage, black truffles (HK$358). Meanwhile, the risotto with wild mushrooms, “Testun” barolo cheese, asparagus, black truffle (HK$368) offers a delicious combination of earthy and rich flavours, making it the perfect choice to celebrate the season’s bounty.

Diners can indulge in these exquisite dishes that celebrate the rich flavours of black truffles while enjoying panoramic harbour views at Cucina. The Australian black truffle dishes are available on the all-day à la carte menu from 15 June to 16 August 2025.
