Chef Falser hails from a six-generation winemaking family in Northern Italy, and his culinary identity is deeply rooted in his hometown of South Tyrol. As the visionary behind the Michelin-starred Johannesstube, Chef Falser has spent over a decade perfecting his “Taste Nature” concept, which pays tribute to high-quality regional ingredients.
Chef Falser has spent 14 years honing his craft at luxury international hotel brands across Asia and the Middle East. He is also the founder of the culinary consultancy Falser Culinaria. His visit to Cucina will highlight his expertise in creating visually stunning and ecologically conscious dishes with prized natural ingredients, such as monk’s beard, sea lettuce, heirloom tomato, and chicory.
Chef Falser brings his exclusive three‑day residency to Hong Kong, presenting a six-course tasting menu at HK$988 per person, à la carte and set lunch options, and a one-night-only wine pairing dinner priced at HK$1,388 per person on 16 May. Showcasing a series of signature dishes that bridge the gap between the Mediterranean Sea and the Alpine peaks, highlights include seared Mediterranean tuna, pickled daikon, king crab cannelloni, lemon gel, lobster dressing – a sophisticated interpretation of coastal flavours balanced by bright citrus notes. Another recommendation is the raviolone, ricotta, spinach, Iberico pork pluma, spicy Calabrian nduja, 24-month parmigiano espuma. Featuring a rich filling of Iberico pork pluma and egg yolk, this decadent, oversized ravioli is sure to delight diners who love to indulge.
