MICHELIN-STARRED CHEF IGOR MACCHIA RETURNS TO CUCINA FOR AN EXCLUSIVE FIVE-DAY CULINARY RESIDENCY
Marco Polo Hongkong Hotel
“Chef Igor’s return is a moment we have eagerly anticipated,” said Cucina’s Chef de Cuisine, Andrea Delzanno. “His cooking embodies the very soul of Piedmontese tradition, yet it speaks a global language of curiosity and refinement – values that resonate deeply with our own culinary philosophy at Cucina. We are honoured to present his artistry once again against our iconic harbour backdrop.”
Born in Turin, Italy, Chef Igor grew up cooking alongside his father, which ignited his lifelong culinary passion. His career has taken him through acclaimed restaurants and hotels both in Italy and internationally, where exposure to diverse cultures and cuisines shaped his distinctive gastronomic style. Renowned for seamlessly blending tradition with innovation, he earned a Michelin star for La Credenza in San Maurizio Canavese just one year after joining the restaurant. Today, he is the chef-owner of La Credenza, Casa Format, and SP143 Pizzeria Contemporanea in Turin.
Inspired by his travels, Chef Igor’s culinary creations blend the heritage of Piedmontese cuisine with flavours from around the world. Available throughout his residency at Cucina are nine signature dishes crafted with premium seafood and seasonal ingredients. Not to be missed is the umami and harmoniously balanced amberjack, guacamole, seven-herb oil (HK$288). Other highlights include the elegant red mullet and mussel soup with fregola (HK$258) brimming with Mediterranean flavours, and the creamy curry and coconut risotto, yellow tomato chutney, Sicilian red prawn tartare, chive oil (HK$348), which brings the aromatic nuances of Southeast Asian cuisine.
Showcasing Chef Igor’s culinary artistry at its finest, the four-course tasting menu (HK$888 per person) features signature creations that reflect his innovative approach to Italian cuisine. Highlights include the Rossini-style sea bass fillet. This contemporary interpretation of an Italian classic replaces the traditional beef fillet with delicate sea bass to balance the richness of the duck liver. Guests can conclude their meal with the mezcal granita with white chocolate mousse, a refreshing finale featuring the subtle smokiness of mezcal complemented by the velvety richness of white chocolate mousse. To further elevate the experience, guests may opt for a four-glass wine pairing (HK$428), featuring carefully selected labels that complement Chef Igor's creations.
Guests are invited to savour Chef Igor’s exceptional creations while enjoying Cucina’s sweeping harbour views. For reservations, please call +852 2113 0808 or purchase via online store.
