White Asparagus Temptations at Cucina

Hong Kong SAR, China, 26 March 2025 – With the arrival of spring comes the highly anticipated white asparagus season. From 1 April to 14 June, Chef de Cuisine Andrea Delzanno unveils six exclusive Italian creations that highlight the distinctive characteristics of this prized vegetable.
                                             
Chef Andrea meticulously handpicks AAA-sized white asparagus from Germany’s Black Forest region. “The quality and aromas of white asparagus vary by region due to differing soil and weather conditions. I prefer the German white asparagus for its sweetness and plump size,” he explains.

A perfect dish to showcase the best flavour of white asparagus is the poached white asparagus served with hollandaise sauce and 24-month San Daniele prosciutto (HK$328). The exquisite San Daniele ham offers a rich flavour and melt-in-your-mouth texture that beautifully complements the sweetness of the asparagus.

Another must-try dish is the white asparagus cream soup topped with a Tayouran soft-boiled egg, smoked pancetta, and black truffle (HK$238). This creamy soup is infused with the delicate aromas of white asparagus, while the sweet and smooth soft-boiled egg is enhanced by black truffles to ensure pure bliss in every bite.

For seafood aficionados, the risotto with white asparagus, mixed seafood, mascarpone, seared Hokkaido scallops, mentaiko (HK$388) promises a celebration of marine delights, with mentaiko lending a hint of spice and depth. Alternatively, the spaghetti with garlic, olive oil, and chilli with white asparagus, razor clams, fried sakura shrimps (HK$368) offers a delightful pairing of sweet and crunchy white asparagus with other crispy textures.

Completing this gastronomic journey are the pan-fried Italian veal chop with sautéed white asparagus, thyme, béarnaise sauce, and black truffle (HK$488), along with the white asparagus salad with Norwegian smoked salmon, parmesan cheese, trout roe, and horseradish (HK$288).

Cucina’s white asparagus dishes will be available all day during lunch and dinner from 1 April to 14 June 2025.
