Hong Kong SAR, China, 22 January 2026 – As we step in the year of 2026, Garden Lounge at The Murray, Hong Kong, a Niccolo Hotel, invites guests to embark on an exquisite modern Cantonese culinary journey with the newly launched “Flavours of Canton” Specialty Menu and “Revel in Heritage” Chocolate Afternoon Tea, starting from 10 February 2026. These menu reinterprets timeless Cantonese flavours with contemporary finesse, as well as infusing local ingredients, offering a refined and memorable dining experience.

Curated by Chef Kenny Chan, Chef de Cuisine – Chinese, the “Flavours of Canton” concept at Garden Lounge elegantly reinterprets the rich heritage of Cantonese cuisine through meticulously crafted set lunches, à la carte selections, and sharing set dinners. Chef Chan masterfully blends time-honoured techniques with premium, sustainable ingredients, creating a symphony of refined flavours and textures that reflect both tradition and modernity. The Peking Duck, Two Ways, the first way features authentic roasted duck which combines the authentic roast with the ocean-sweet caviar, for a scrumptious twist. The second way presents the minced duck stir-fried with mushrooms, Chinese preserved sausage, and fresh water chestnuts, served with crisp lettuce wraps for a refreshing and flavourful finish. With extensive experience at renowned establishments, Chef Chan infuses each offering with a contemporary flair while maintaining authentic Cantonese roots. 

Diners embarking on this culinary journey are greeted with vibrant appetizers, such as the Crispy Duck Salad and Abalone with Crispy Scallion, both thoughtfully designed to highlight classic flavours while elevating their presentation and texture.

The journey continues with nourishing soups like the Double-Boiled Chicken Soup with Fish Maw and Coconut, showcasing traditional preparation methods. The indulgent mains include the Braised Short Ribs with Dried Tangerine Peel, offering a distinctive Hong Kong aroma and flavour with a delightful twist on a Cantonese classic. Also on the menu is the opulent Honey-glazed Deep-sea Chilean Sea Bass, a steamed seafood dish which resonates with freshness and refinement of Southern Chinese culinary preparations. Each dish is crafted to honor the essence of Cantonese cooking while appealing to contemporary palates.

Among the Chef Kenny’s signature offerings, the Typhoon Shelter Style Wok-fried Alaskan King Crab Leg is a breathtaking highlight of the Flavours of Canton collection. This dish captures the bold, aromatic essence of classic Hong Kong typhoon shelter cuisine; garlic is fried to a deep golden crisp, and the succulent crab legs are delicately coated in a light batter, wok-tossed in fragrant garlic-infused oil. The addition of golden garlic bits adds an irresistible layer of savoury crunch, elevating this dish to a new level of sophistication.

Equally enticing is the Stir-Fried M5 Beef with Foie Gras and Black Pepper, where premium M5 beef is seared to medium-rare perfection. Golden-fried foie gras cubes and crisp blanched asparagus are united in a sizzling wok with fragrant garlic butter and a bold black pepper sauce, creating a rich umami experience that delights the senses.

To conclude this Cantonese journey, the innovative Almond Tofu Xiao Long Bao with Ginger Chocolate Dip offers a delightful dessert revelation. Silky almond tofu is encased in delicate steamed parcels, perfectly complementing the creamy ginger-infused dip. This harmonious blend of cool elegance and subtle spice exemplifies Chef Chan's talent for merging traditional flavours with modern culinary artistry.

Indulge in the vibrant flavours of Hong Kong at the Garden Lounge with our exquisite "Revel in Heritage" Chocolate Afternoon Tea, masterfully crafted by Executive Pastry Chef Jean-Marc Gaucher. Chef Gaucher’s extensive experience in Hong Kong means that his unique offering showcases a delightful array of decadent sweets that pay homage to the city's rich culinary heritage.

Savour our signature Hongkong Rocher, a luscious creation featuring 64% Dark Chocolate blended with Sicilian Pistachio and Hong Kong's beloved Crispy Rice Noodle, which adds a delightful crunch reminiscent of local street snacks. Dive into the Gianduja 52% Milk Chocolate, infused with fragrant 30-Year Chinese Tangerine Peel for a nod to Hong Kong's revered preserved citrus fruits that are celebrated for their distinct aroma and flavour. Don't miss the innovative Black Sesame Tart, which marries 64% Dark Chocolate with Earl Grey Tea Cremeux. Each bite of the Mandarin filling in 35% white chocolate reflects the essence of the citrus fruit.

Complementing the sweet treats are savoury delights that resonate with Hong Kong’s culinary sophistication. Enjoy the Hong Kong’s Signature XO Sauce with Boston Lobster Salad served on Tomato Bread, the Foie Gras Tart topped with Amur Caviar, and the exquisite Truffle Tamago drizzled with Teriyaki sauce on charcoal bread. Also featured is the Norwegian Smoked Salmon adorned with Ikura on fragrant Herb Bread.

For the perfect finish, our Traditional Butter & Cocoa Nibs Scones paired with Chocolate Madeleines are a must-try. They come served with homemade Strawberry Jam, Clotted Cream, and a rich Gianduja Spread, rounding out this indulgent afternoon tea experience.
